  • 1/2 cup breadcrumbs or panko
  • 1/4 cup finely chopped onion

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • 1 tablespoon olive oil (for cooking)

Instructions
 

  • 1. **Prepare the Chickpea Mixture**
    - Drain and rinse the canned chickpeas thoroughly. Pat them dry using a clean kitchen towel.
    - In a large mixing bowl, mash the chickpeas with a fork or potato masher until they are mostly smooth with some texture remaining.
    2. **Add the Aromatics and Spices**
    - To the mashed chickpeas, add finely chopped onion, minced garlic, and grated carrot. Mix well to combine.
    - Sprinkle in cumin, paprika, coriander, salt, and pepper. Stir until the spices are evenly distributed.
    3. **Incorporate the Binding Ingredients**
    - Add the breadcrumbs and flour to the mixture, followed by the beaten egg or flaxseed mixture for a vegan option.
    - Mix thoroughly until the mixture holds together when pressed. If it’s too crumbly, add a little water, one teaspoon at a time, until it binds well.
    4. **Form the Patties**
    - Divide the mixture into equal portions (about 8–10, depending on your preferred size) and shape them into round patties. Flatten them slightly for even cooking.
    5. **Heat the Pan**
    - Heat olive oil in a non-stick skillet over medium heat. Once the oil is hot, carefully place the patties in the pan, leaving space between them.
    6. **Cook the Patties**
    - Cook each patty for 3–4 minutes on one side until golden brown and crispy. Flip carefully and cook the other side for another 3–4 minutes.
    7. **Drain Excess Oil**
    - Remove the patties from the pan and place them on a plate lined with paper towels to absorb any excess oil.
    8. **Serve Warm**
    - Serve the chickpea patties warm with your favorite dipping sauce, salad, or as part of a sandwich or wrap.
