  • Preheat Oven:Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
    Wash and Prep Potatoes:Wash the purple sweet potatoes thoroughly and peel them if desired. Cut them into 1-inch cubes for even cooking.
    Season the Potatoes:In a large mixing bowl, toss the potato cubes with olive oil, garlic powder, smoked paprika, salt, and black pepper. Ensure the potatoes are evenly coated.
    Spread on Baking Sheet:Spread the seasoned sweet potato cubes in a single layer on the prepared baking sheet. Avoid overcrowding to ensure they roast evenly and turn crispy.
    Roast in Oven:Roast the sweet potatoes in the preheated oven for 25-30 minutes, flipping them halfway through. They should be tender on the inside and slightly crispy on the edges.
